Rhubarb Custard Pie

Mike's parents are visiting and I made a rhubarb custard pie for his mother's birthday.  If you make this one and don't have a deep dish pan, scale back the rhubarb by as much as half.  And I can't let today pass without making another pie, so coconut it is!

It did! This is the second time I've made it. It does require a little extra baking time, I think, and it's harder to gauge the doneness of the custard.

I had loads in the freezer. Take care with the recipe notes if you get yours at the grocery store. :-)

A Blessed Wilderness
